In the real pit, the front frame of the canopy that you see is large and goes around you. In fact the pit itself is engulfs you. You would never beable to see all instruments in one view(it would take a series of scans[or headchecks] from left to right focusing on set areas). Think of it as driving, when focusing on the road you may only make temporary scans of the instruments and and cannot see all instruments and the entire windshield frame in one view. Likewise, the pit itself is large and you actually have to look around. Your peripheral vision is actually what gives the illusion of seeing the entire pit in one view. In the view of the pit at the site you referenced, it appears that they are taking the route that Janes took with FA/18. That is, using a 3d pit with dynamic lighting. The problem is that you lose a tremendous amount of detail(and FPS) in doing so. However, it does allow for the illusion affect or simulated affect of having very much of the pit available in one view.
